Roasted Red Peppers

Jarred roasted red peppers are great and super convenient to have on hand for a variety of dishes, but if you've got fresh red bell peppers and have a little extra time to make them yourself, it's worth it. If stored in an airtight container, homemade roasted red peppers can last up to a few days in the fridge, longer if you submerge them in olive oil. A glass jar is best!


INGREDIENTS:

  • 1-2 Tbsp. Olive Oil
  • 1 Large Red Bell Pepper

INSTRUCTIONS:

Step 1) Turn on your oven's broil setting (start with high) and place the rack in the middle section of the oven.

Step 2) Using your knife, quarter your red bell pepper, removing the core and the seeds. Drizzle with olive oil and place sections skin-side up on a parchment lined sheet pan.  Char the peppers until the outer skin has blackened.

Step 3) Place the charred pepper in a Ziploc bag, seal, and allow to rest for about ten minutes. The contained steam will allow you to easily remove the skin from the pepper.

Step 4) Once you remove the peppers from the bag, gently peel the charred skin away. You can use a paper towel to do this step, if you prefer. Once cooled, store quartered roasted peppers (or cut into strips, if preferred) in a glass jar in your refrigerator.
